
Chicken Misua with Kabocha Squash and Green Cabbage (TCM-inspired)
Home cooking isn’t just about filling the table — it’s about caring for the people you love. These days, much of my cooking is for my senior parents, Dharleeeng and Nene, who are diagnosed with diabetes, arthritis, and gout (Western Medicine). That means I’m always mindful about ingredients: light on the oil (if I can’t avoid it), careful with seasoning, and recreating dishes that nourish while staying gentle on their bodies.
This Chicken Misua with Kabocha and Green Cabbage dish is inspired by Traditional Chinese Medicine (TCM). It’s a simple one-pot meal — light, balanced, and designed with comfort in mind. Misua noodles are soft and delicate, making them easy to eat. The skinless chicken brings protein without heaviness and added fat, while vegetables like kabocha and cabbage add natural sweetness and fiber.

Chicken thigh (skinless): lean protein to keep strength up without heaviness.
Misua noodles: delicate, quick-cooking, and easy to eat — perfect for seniors.
Together, these ingredients create a bowl that is restorative, comforting, and mindful of chronic conditions that so many elders face.
