Air-Fried Pineapple Mochiko Cake | Amrey’s Kitchen™

After enjoying the Air-Fried Vegan Dark Chocolate and Raisins Pancake, I found myself craving something chewy and sticky in texture. Yes. Anything that has to do with mochiko flour, save for mochi. I do enjoy making mochi, however, since I’m not in my usual kitchen, I’d rather forego the multiple steps involved in making one. #conveniencecooking is my current cooking style. Well, for the most part, that is. LOL.

 

 

Checking what’s available in my stash, I decided to make a Vegan Pineapple Mochiko Cake using my handy-dandy air fryer. The #bhooiz were not able to have a taste of the previous pancake because it’s loaded with dark chocolate. This time around though, I intended to include them and let them be the judge. LOL. Only in small portions, as this recipe is really not intended for dogs. 

 

I did not dress this up as I didn’t want it to be too sweet. But if you want to serve this with some flair, top it with glazed pineapple slices, and toasted desiccated coconut, and sprinkle with confectioner’s sugar. Just make sure to enjoy a drink that has no sugar in it. Kisig's Simple Chai Masala, anyone? #mindfuleating

 

 

I enjoyed this as is and with a mug of hot Spirulina drink and a fresh batch of Amrey’s Kitchen™ Vegan Tapa Chunks. The play of flavours among all three: sweet, bitter, and salty, really satisfied my tastebuds!
