Easy Sweet Sambal Pulled Chicken Sandwich | Amrey’s Kitchen™

Sandwich. It is a #quickandeasy to prepare meal that can either make or break your diet, depending on how you build it. It can be as healthy as you want it to be, or it can be a cause of a heart attack. It’s so versatile, and making one gives you full rein on what you want to make of it.

 

Chicken. It’s one of the most versatile meat proteins, depending on the part, you can ever work with. It’s akin to a blank canvas, especially the breast part, as it absorbs the flavours you put into it.

 

MONAY

 

There’s this small store near me where I can get some monay, which is a Katutubo (Pinoy) version of dinner roll. I have not had monay for quite some time since I came to this place, so it was really nice enjoying this dinner roll these past few months. It’s being sold as a pack of four, and I usually consume two in one sitting. And the other two? For my gluttonous #bhooiz. Hah. Aaaah, the novelty of sari-sari stores!

 

I had the opportunity to go out and procure some fresh produce the other day, and since the bhooiz have been relying on kibbles for their sustenance as of late, I decided to give them a treat: chicken gizzard! Of course, I also treated myself to some choice cuts like chicken breast and leg quarters.

 

I usually buy fresh chicken meat, good for two days’ meals (given the chance), and marinate them before storing it in an ice chest with loads of ice. As mentioned in my earlier posts, the makeshift kitchen I am using is not equipped with a refrigerator. So, we make do with what we got, yeah? Love and Gratitude, as always!

 

Seeing the pack of monay on the table that I bought a few days back, instead of cooking rice as my carbohydrate source, I decided to make something that would go with it. Hence, this Sweet Sambal Pulled Chicken Sandwich recipe. You just got to love the burst of flavours as your tastebuds are being tickled with the sweet and spicy combo!

 

 

I was not able to get some lettuce, so my leafy veggie of choice is the green cabbage. #mindfuleating at its finest, baby! Other ingredients you can use to make this sandwich a complete, nourishing meal are tomatoes, onions, alfalfa sprouts, pickles, and whatever else you want. Sprinkle some roasted sesame on top and serve with fries or some chips. Let your inner Picasso shine and Experience LOVE in every bite!
