There’s this pizza place I loved to frequent years ago. Their thin-crust panizza (rectangular pizza) is served with diced onions and tomatoes, alfalfa sprouts, and coral lettuce. It’s sliced in half, lengthwise, and then diagonally. The idea is to be able to add all the veggies on the pizza before rolling it up. This is their take on The Original by Chef Chris Locher.
Chef Chris recreated the Italian panizza and developed this version of a thin crust rectangular pizza with a combination of five cheeses for the sauce. He served it with alfalfa sprouts, microgreens, and arugula.


During my Southern sojourn to celebrate Dharleeeng and Nene’s Golden Wedding Anniversary, I suddenly craved panizza. For #conveniencecooking, I did not make my own pizza dough. I opted for the wheat tortilla wraps I had in the refrigerator. Since my diet is highly plant-based and I develop and sell #vegan frozen food and condiments, I always have my favourite and trustworthy plant protein source: shiitake mushrooms! I’ve yet to perfect my meltable vegan cheese recipe, hence I used the traditional dairy cheese in this recipe. A good mix of sharp cheddar, mozzarella, and edam is good for this recipe. However, I only had edam at hand when the craving hit me, so yes. Edam cheese, loads of garlic, mushrooms, and a good tomato sauce base can satisfy that pizza craving in a jiffy!

With my habit of having fresh greens or veggies in every meal (as much as possible, that is), I usually stock up on lettuce or green cabbage. #mindfuleating at its finest indeed. The lettuce leaves break through the creaminess of the cheese, the tartness of the sauce, and the zing of the garlic. A wonderful explosion inside your mouth as the medley of flavours suddenly makes you want to do the samba! Or maybe some belly dancing. Your pick. I usually just do my happy dance. LOL.
