
Eggs
A complete source of protein touted by many. I remember when the kitchen just started back in 2008, I often had multiple trays of eggs stacked up on the kitchen counter for my sweet creations and quick meals of omelette, scrambled eggs, or a well-done sunny-side-up.
Aubergine aka Eggplant
As mentioned in my Aubergine Salad post, it’s been quite some time since I’ve had this vegetable. I do enjoy it but it’s something I don’t really go out of my way to procure. Until the last few weeks of my sojourn, that is. Hah. I just could not get enough of different versions of ensaladang talong! This vegetable is high in fibre, low-carb, rich in nutrients like manganese, potassium, and folate and has antioxidants.

Oh, and did I forget to state the obvious? It’s violet! Haha. #porphyrophile

Tomatoes and Onions
I don’t know about you, but the flavours created by combining these two are so distinctly addictive. The natural sweetness of cooked onions with the subtle tanginess of cooked tomatoes just does it for me.

Spices
I used Amrey’s Kitchen™ Luntian Spice Mix to give this vegetarian tortang talong a twist. Although not the same as our spice mix, you can still amp up your tortang talong by using 1 tsp turmeric, a pinch of smoked paprika, and salt and pepper to taste.
