
It’s that time of the year dedicated to all the moms all over the globe. The love, care, and nurturing we’ve received from these amazing women is something that we should be truly grateful for.
I, for one, cannot express in words how grateful I am to have my Nene carry me in her womb for nine months, and then raise me and deal with all my craziness, especially during my adolescence. And until now, the grace she’s been showing all her children is truly something else.
Me being me, what best way to show my appreciation? Through food, of course! Hah. Such a no-brainer, ei?


Nene and I have always shared our love for Japanese cuisine. The simplicity and cleaness of the flavours of the dishes is something I learned that is not quite easy to achieve. Hence, I’d rather dine out just to enjoy Japanese food. However, as an advocate of #mindfuleating, I still find myself in my kitchen whipping up a Japanese spread if the craving hits. LOL. And yes, it is not as authentic as I want it to be, but it is definitely satiating, delicious, and nourishing, not just for the body but for the soul as well!
Today’s recipe share is dedicated to Nene and all the amazing mothers out there. Thank you for all that you’ve done and continue to do for your children, no matter how old they may already be.

Nasubi
Nasu or Nasubi is the Japanese word for aubergine/eggplant. I mentioned that I really don’t go out of my way for this nightshade, (link aubergine frittata post) however, it seems like my current go-to is this purple-hued vegetable since I saw the small ones at the supermarket I frequented in my last geographical location. I kid you not when I say I’ve had my fair share of aubergine salads and omelettes there. LOL. So, now, it’s about time to enjoy it battered and fried! #pagkaingginhawa
Nasubi Fritters. One of my comfort food choices. Just like how the majority of us associate comfort when it comes to our mothers, this dish will definitely remind you of the comfort you’ve felt growing up, thanks to your mom’s unconditional love and nurturing!

I partnered this with Vegan Mushroom Spaghetti as I was nostalgic of the Creamy Spaghetti with Fried Battered Zucchini I had during my first trip to Sagada. If enjoying as is, Tartar Sauce or honey-mustard dip goes well with these crunchy fried discs (if you’re not strictly vegan, that is). You can also use this as a topping for your leafy salad with Mango-Coconut Dressing. Yum!
