The Last Supper was when Jesus Christ shared a Passover meal with his disciples, washed their feet, and predicted his betrayal and demise.

 

Holy Week is observed by Catholics with solemnity, commemorating the Passion of Christ. Growing up, I remember making our own ‘palaspas’ (palm fronds) to be blessed by the priest on Palm Sunday, which marks the beginning of the Holy Week. We then pin it on our doors as a symbolic gesture of welcoming Jesus Christ into our home.

 

In the Philippines, devotees observe certain practices and traditions. One example is Abstinence and Fasting. Most devotees would abstain from doing some activities they usually enjoy and/or consuming red meat and alcohol to remember the sacrifices of Jesus Christ. While some opt for fasting for several days. Usually, devotees only consume fish and vegetables during this time.

Today’s recipe share is a One-Bowl No-Yeast Vegan Moringa Bread. Most bread recipes use yeast as a leavening agent to make breads rise and fluffy. One of the many perks of making your own bread is that you can add anything you want to it, like a blank canvas. All you need is a basic bread recipe, and you’re good to go. Whenever I make bread using yeast, the vegetarian ones contain honey and cheese — I just love the combination of garlic and cheese; the vegan ones are usually loaded with herbs, oats, and dried fruit. However, bread is not something I often make hence, I don’t usually have yeast in stock.

 

Some say that the Passover meal during the Last Supper consisted of bean stew, lamb, olives, bitter herbs, fish sauce, matzah (unleavened flatbread), and wine. Although this recipe is not considered unleavened as it still uses baking powder, this is to honour the unleavened bread consumed by Jesus Christ and his disciples during The Last Supper, and as an observance of the abstinence practice of not consuming red meat.
