Katutubo Thursday: Embracing Regional Colloquialism with Southern Spaghetti (Udong with Tinapa) | Amrey’s Kitchen™

Tinapa.

 

Every time I hear this word, I often think of smoked milkfish (bangus), which is readily available in supermarkets (frozen and pre-packed), or smoked mackerel scad (galunggong) and/or sardines (tamban), which I usually only get from ambulant vendors or the wet market. I enjoy tinapa with fresh veggies and spiced vinegar, or use it in pasta dishes. The distinct smoky flavour it lends to a dish is truly remarkable!

So when someone offered me tinapa a few days back, I was expecting the smoked fish I’ve always had in mind. I was already salivating thinking about how I’d be enjoying it with some fresh sides and sambal vinegar. But to my amazement, I was offered sardines in tomato sauce. I was a little flabbergasted and had to verify the term they used to refer to canned sardines.

 

The Philippines, having several Ethno-Linguistic Groups, it really is a no-brainer that there are a lot of regional colloquialisms. And one good example is tinapa. My #bhooiz and I are now sojourning in Mindanao, in the Southern part of the country. And it is just a few days ago that I learned this regional colloquial term. Hah. This information really made my day, as I always enjoy learning new words and terms.

Another regional colloquial is southern spaghetti, aka Udong/Odong. To celebrate the Mindanao region as my bhooiz and I enjoy our stay here, today’s recipe share is my take on Southern Spaghetti: Udong with Tinapa. It is also only whenever I’m in the Mindanao region that I get to find udong noodle packets.

 

Since it’s a Thursday, let’s broaden our word bank with some Katutubo 101!

 

Udong (n.) - dried yellow noodles (wheat flour)

Udong (n., colloq.) - southern spaghetti

Tinapa (n.) - smoked fish

kamatis (n.) - tomato
