
Ginger. This heaty aromatic’s flavour can be really addictive. Although the weather’s quite warm these days, I still found myself craving some warming food. And whenever that happens, given I have the ingredients on hand, I usually go for Chicken Tinola, which I consider one of my ‘go-to’ meat-based comfort foods.

Today’s recipe is Pan-Fried Chicken Tinola loaded with lots of ginger. You can opt to lessen the amount of ginger by half if you’re not much of a ginger person.
And yes, it’s Katutubo Thursday, so time for some Katutubo 101!
There really is no known phrase that equates to comfort food in the Western context. There are other transliterations for comfort food though, like: pagkaing nagbibigay ginhawa, pagkaing pangpalubag-loob, pagkaing nagbibigay aliw, nakakaaliw na pagkain et al. Since I find it quite a mouthful to say any of these, I decided to coin my own and came up with pagkaing ginhawa.

pinirito/prito - fried
manok - chicken
luya - ginger
bawang - garlic
siling haba/siling sigang - banana chili
sibuyas dahon - leeks
pechay - Philippine cabbage
patis - fish sauce
pamintang durog - ground pepper/pepper powder
pamintang buo - whole peppercorns
mantika - cooking oil
tubig/danum - water
