There’s this fried chicken I tasted a few weeks back from a hole-in-the-wall micro-business near me. They serve it to you on a banana leaf inside a single-use plastic with gravy and spiced vinegar. I do get the gravy part, but it made me ask: “What’s with the spiced vinegar?”
I remember that most, if not all, street food fried chicken are served with spiced vinegar. Although spiced vinegar really goes well with other fried street food like chicken skin, proven, botchi, isaw, day old chick, et al. I’m still not quite sure if it’s the condiment I’d go for when it comes to fried chicken (whole, half, wings, legs, et al). I know it’s a matter of preference, still, I’m curious as to why it is so. LOL.
And then, it also hit me, why is it that chicken is the most consumed comfort food? I am well aware that chicken is one of the most versatile meats you can ever work with, as it tends to be ‘neutral’. If you’re 100% plant-based and vegan, this ‘protein’ source is akin to tofu and mushrooms when it comes to versatility.
Although it’s rare for me to enjoy food outside for quite some time now, as I prefer making my own since I started my #mindfuleating advocacy, my protein sources are ever-changing.
Being unabashedly me, I’d still go for how I prepare chicken. Today’s recipe share is just that. This Air-Fried Chicken is one of my go-to dishes if the craving hits.
