There’s something about Chicken Afritada that always brings comfort to a long day—the slow simmer of tomato sauce, the sweet bite of red capsicum, and that moment when the kitchen is filled with aroma reminding of home. So on a quiet Sunday (read: chaotic morning with two tail-waggers demanding their rightful attention), I decided to make a pot of afritada—with chicken hearts and ginger because, well, I love ginger and chicken hearts were available. LOL.
While the marble potatoes and carrots were gently bubbling in the sauce, my #bhooiz—ever the furry sous-chefs—stood watch. Yeti gave me his classic “are those for me?” eyes, and Kisig… well, he took it upon himself to supervise from the very center of the kitchen floor. Classic.
Pawntee’s Grub™ Holistic Chicken Liver-Chia Treat
To ease their impatience (and the dish fur-free), I handed them their favourite Pawntee’s Grub™ Holistic Chicken Liver-Chia Treats. High in protein, rich in omega-3s, and just crunchy enough to keep the little #furballs happy while I cooked. Guilt-free snacking for them, focused cooking for me. Win-win.
TiKi's One-Pot Chicken Afritada
As the afritada simmered—its sauce thickening into a tangy, gingery hug—I thought about how much Filipino food carries stories. Spain indeed has a huge influence on most Pinoy dishes, but Pinoys always have that ‘personal touch’ to make it our own. And like many things in life, it’s best enjoyed with loved ones… even the four-legged, nosey kind.
I enjoyed it with Ginger-Spirulina Rice. I carefully selected some carrots, potatoes, and chicken hearts for the bhooiz. And together, we curled up on the kitchen floor for our version of a feast. Because this is what love tastes like. ❤️
