
There are days when I crave #pagkaingginhawa with a kick—a bowl of something warm, tangy, and alive with spice. That’s where this Spicy Pan-Fried Sour Chicken Noodle Soup comes in. A flavor-forward twist on our beloved sinigang, it’s got that signature sourness, a gingery warmth, and just enough heat to wake your soul up from the inside out.


I start by pan-frying the marinated chicken cuts and then sauteing red onions, ginger, garlic, and tomatoes until everything’s golden and fragrant. Then comes the soup base: a mix of sinigang powder (tamarind mix) and banana chilies. As a certified #noodlic, I chose vermicelli for this dish; flat rice noodles would also be a good alternative. Each mouthful is a perfect balance of spicy, tangy, and gingery—fiery but soothing, bold but healing.

For those who don’t know, sinigang has deep roots in Filipino food culture. Its origins predate colonization, with indigenous communities using fruits like sampalok, binukaw, kamias, and kalamansi to sour their broths. Passed from lola to apo, sinigang evolved with each region—always a reflection of what’s available and what comforts.
This noodle soup carries that legacy. It’s a fusion between sinigang and chicken tinola, two dishes that are Pinoy equivalents to the Western “chicken soup”—but more layered, more soulful. It’s our pagkaing ginhawa—food that doesn’t just fill, but heals and satiates.
