Empanadas are more than just a delicious snack; they are edible reminders of a rich and complex history. These savory hand pies, typically filled with meat, vegetables, or sweet fillings, trace their roots to Spain. The word “empanada” comes from empanar, meaning “to wrap in bread”—a fitting name for a dish that hugs its flavorful fillings in a golden, flaky crust.

 

 

When Spain colonized the Philippines in 1565, they brought not only Catholicism and the Spanish language, but also their culinary traditions. Over 333 years of colonization, Spanish influence reshaped Filipino food, and the #empanada became a beloved part of local cuisine. In regions like Ilocos and Vigan, empanadas have been adapted to include local ingredients like longganisa (Filipino sausage), green papaya, and egg, deep-fried to crispy perfection. It’s Spanish origin reimagined with Filipino soul.

 

Today, the Philippines is proudly celebrating 127 years of independence, having declared its freedom from Spanish rule on June 12, 1898. While the colonizers are long gone, their imprint lives on—in our churches, language, and the empanada that still brings families and friends together across generations.
